Theme: Washed Rinds and Pinot
Washed rind cheese was originally developed by monks in France, Italy and Spain. The earliest recorded recipe dates back to the 12th century. Washed rind cheese finds its name due to the nature of the cheese being rubbed with a brine or wine solution. This promotes the growth of bacteria on the surface.
