Recipe: Corn and Chili Fritters with Fresh Salsa

INGREDIENTS:

– 1/2 cup rice flour
– 1/2 cup self rising whole meal flour
– 1 teaspoon ground cumin
– 1 teaspoon  ground cinnamon
– 1 teaspoon ground coriander
– pinch of salt
– 1 beaten egg +1/2 cup milk
– 2 red chili finely chopped
– 450gm fresh corn kernels
– 150gm Mundella Fetta cheese, grated
– 1 bun chopped chives
– 1 1/2 cup vegetable oil (for cooking)

METHOD:

  1. Sift flour’s spice and salt into a mixing bowl
  2. Beat eggs and milk together
  3. Mix egg into flour into a thick batter, fold in corn , fetta and chives
  4. Allow the batter to rest  for 10 minutes before cooking
  5. Shallow fry both sides for 3 minutes

Tomato Avocado Salza
– 2 firm avocado
– 2 micro chopped shallots
– 1/2 cup diced fresh grape tomato
– 1/2 cup chopped coriander

  1. Simply toss all ingredients together, serve on top of fritters with a squeeze of white balsamic glaze.
